Brasa Los Cántaros is a charcoal-grill restaurant in the heart of Zaragoza: since 1986 we have been cooking the finest national and regional meats over our embers, slowly and with no shortcuts, keeping tradition and flavour alive. This is our story, and what makes us who we are.

Our story
We have been cooking over live embers in Zaragoza's Centro district since 1986: a slow technique, local produce, and a table meant for sharing.
The origin
Since 1986
Brasa Los Cántaros — the lifelong Mesón Los Cántaros — opened its doors in 1986 in Zaragoza's Centro district.
From day one the house was defined by a simple idea: cook local produce over live embers, slowly and with no shortcuts, and serve it at a table where sharing is part of the ritual.
The house emblem: the water jugs and the fire.
The technique
The embers
We cook over charcoal embers, on a live fire and with no shortcuts: it is the technique that gives the house its name and every dish its flavour.
The grill sets the pace, not the clock. What we ask of the fire is patience, not spectacle.

The place
The dining room
Our dining room is a welcoming space in the heart of Zaragoza's Centro district: dressed tables, warm light, and personal service, made for long, unhurried meals.
A room for sharing with family, over good wine and seasonal cooking.

The product
Ternasco de Aragón
Our signature dish is Ternasco de Aragón, the young lamb of our region, roasted over the embers with no marinade to mask the cut. Alongside it we serve selected national meats of the finest quality, such as native-breed beef.
For us, ternasco is the most honest answer to what a guest expects from an Aragonese grill house: recognisable product, respectful technique, and generous portions.
Ternasco lamb chops straight off the grill.
The land
Aragón at the table
We are in Zaragoza and the menu reflects it: shepherd's migas, grilled snails, Aragonese morcilla, and wines from the Aragonese D.O. regions.
Seasonality leads. What walks through the kitchen door depends on the market, not on last year's blackboard.

“Good bread, good wine, a good table and good embers are the sign of a good house.”
How we cook
Four working principles that shape the kitchen and the room every day of the year.
Embers
All hot cooking goes over charcoal embers, on a live fire. We never roast over gas and never cut the fire short with industrial griddles.
Season
The menu moves with the market: the set lunch menu changes daily, and seasonal dishes come and go with the garden.
Aragón
We work with Aragonese produce wherever we can: Ternasco de Aragón, morcilla and cured meats from the region, and wines from the Aragonese D.O. regions.
Menu
A single fire and four ways to sit down to it: à la carte, a weekday set lunch menu, mid-morning almuerzos, and full-table group menus.
